Week of 19–25 October 2026. Five dinners, with squash, leeks and roots doing some of the work. There are two meat-free dinners, one fish dinner, chicken with mash and a cottage pie for Sunday. The pie makes six portions, so there are two extra portions beyond the four-person dinner.
The cover dish is Friday's squash and chickpea traybake.
The shopping list below includes the full week's ingredients. Check your cupboards before buying another jar of mustard.
| Day | Dinner | Published recipe time |
|---|---|---|
| Monday | Garlic Mushroom & Spinach Orzo | 45 minutes |
| Tuesday | Mustard Salmon with Leek and Lentil Ragout | 35 minutes for the original two servings; allow extra time if cooking four fillets in batches |
| Thursday | Creamy Mustard Chicken with Mash | 55 minutes |
| Friday | Roast Squash and Chickpea Traybake with Tahini Yoghurt | 55 minutes |
| Sunday | Beef & Sweet Potato Cottage Pie | 2 hours; six portions |
The dinners, in pictures
Monday: garlic mushroom and spinach orzo

Brown the mushrooms in batches before the orzo goes in. Their golden edges are what make this a proper mushroom dinner. Spinach wilts into the pan at the end, and parsley finishes this dish and two more dinners later in the week.

Tuesday: mustard salmon with leeks and lentils

The leeks soften into the lentils, then a little cream and lemon bring the ragout together. Double the published two-person recipe for this menu. The salmon needs an air fryer; keep the fillets in a single layer and allow extra time for batches.

Thursday: creamy mustard chicken with mash

The Dijon is already open from Tuesday. Here it makes a cream sauce for the chicken, with buttery mash to catch it and broccoli alongside. All three parts are included in the shopping list.

Friday: roast squash and chickpeas with tahini yoghurt

Let the squash catch and caramelise at the edges. The cool tahini yoghurt, parsley and pomegranate go on at the end. Warm flatbreads make it dinner, and they are included in the list too.

Sunday: beef and sweet potato cottage pie

Give this the longer Sunday slot. The beef and lentil filling cooks beneath a sweet potato lid, with forked ridges that turn golden in the oven. Make the full six portions: that is dinner for four and two extra portions.

Why these dinners fit together
Spinach goes into the orzo and the lentils, parsley finishes three dinners, and the same jar of Dijon works in the salmon and chicken. Buy those once, in the amounts below, rather than shopping for each dinner separately.
Squash and leeks are among the UK-grown produce available this October. This menu also uses cupboard ingredients and produce from further afield.
The orzo uses vegetable stock in place of the recipe's optional wine. The traybake includes its flatbreads, yoghurt sauce, parsley and pomegranate. The chicken dinner includes the broccoli beside the mash. Extra bread and salad for the orzo are left for you to choose, so they aren't hidden in the main list.
The salmon recipe is written for two people. For this four-person menu, double its ingredients and cook the fillets in a single layer, in batches if your air fryer needs it. Its published 35 minutes is for the original quantity.
Wednesday and Saturday are open. Use another household favourite or change the order to suit the evenings you actually have. Sunday has the longer cooking slot.

Keep this menu for another week
Open this menu in Chop it, then choose Add to Chop It to keep a copy in your account’s Saved Weeks. Sign in or create a free account if asked. You can open it again, choose Use this week when you want to cook it, and bring the ingredients together in Shop.
Keep or share the full menu link: https://chopit.app/m/R3HBG62G. The menu keeps four servings for the first four dinners and six for Sunday’s pie. Saving it is separate from choosing it as This Week.
The saved menu keeps the original recipes. Chop it’s default shopping list leaves optional ingredients out: our list above includes 300 g tenderstem broccoli for the chicken and 80 g pomegranate seeds for the squash. Include those if you want the dinners as pictured. We also chose 150 ml extra vegetable stock instead of the orzo’s white wine. Make that swap when checking your own list. The other optional bread, salad and chives remain outside this menu’s list.
