Banana & Peanut Butter Smoothie Bowl
Glossy ribbons of maple syrup over the pale banana base, jewel-bright berries clustered on top and pumpkin seeds catching the light.
Ingredients
Serves 2- 2 tbsprolled oats
- 2 tbsppeanut butter, smooth
- 1 tbsppumpkin seeds
- 100 mllactose-free milk
- 1 tbspmaple syrup
- 3ripe bananas, frozen
- 1 tspvanilla extract
- 100 gfresh strawberries, hulled and sliced
- 50 gfresh blueberries
Method
- Tip the frozen bananas, peanut butter, lactose-free milk and vanilla extract into a blender and blitz until thick and smooth, about 1-2 minutes, stopping to scrape down the sides as needed. The consistency should hold a spoon upright; thicker than a drinkable smoothie. Add a splash more milk only if the blades are struggling.
- Spoon the mixture into two bowls and smooth the surface with the back of the spoon.
- Scatter the rolled oats and pumpkin seeds across the top, then arrange the sliced strawberries and blueberries in clusters so every spoonful gets a bit of fruit.
- Drizzle with maple syrup and serve immediately, before the base starts to soften.
