Sage Turkey with Creamy Tomato Beans
Thin turkey steaks under crisp prosciutto and sage, served over soft white beans with leek, tomatoes and spinach.
Ingredients
Serves 2- 2turkey breast steaks, about 300 g total
- 40 gprosciutto, about 4 thin slices
- 4small sage leaves, about 2 g
- 10 mlolive oil, divided
- Black pepper, to taste
- 120 gtrimmed leek, thinly sliced and washed
- 1garlic clove, finely chopped
- 2 x 400 gtins cannellini beans, drained and rinsed, about 480 g drained
- 150 gcherry tomatoes, halved
- 180 mlwater, plus a splash if needed
- 80 gbaby spinach
- 10 gbutter
- 15 mllemon juice
- Fine salt, to taste
Method
- Put the turkey steaks between two sheets of baking paper and flatten evenly to about 1 cm thick with a rolling pin. Season with black pepper. Lay two sage leaves on each steak and press two prosciutto slices over them, folding the edges underneath so the ham holds the sage against the meat. Wash your hands and clean the board after handling the raw turkey.
- Heat a 5–6 litre air fryer to 180°C for 3 minutes. Brush the turkey underneath and the exposed ham lightly with 5 ml of the olive oil. The steaks need to lie flat with a gap between them; if they do not fit, cook one at a time and add 14 minutes to the total.
- Heat the remaining 5 ml olive oil in a wide saucepan over a medium-low heat. Add the leek with a small pinch of salt, cover and cook for 7–8 minutes, stirring, until soft. Stir in the garlic for 30 seconds, then add the beans, tomatoes and measured water.
- Bring the beans to a gentle simmer and cook uncovered for 8–10 minutes until the tomatoes soften. Crush about a quarter of the beans against the side of the pan to make the liquid creamy, leaving the rest whole.
- While the beans simmer, lay the turkey ham-side up in the air-fryer basket. Cook for 11–14 minutes without turning until the ham edges crisp and the thickest part of the turkey reaches 75°C for 30 seconds on a probe. If needed, cook another 2 minutes and check again. Rest on a warm plate for 3 minutes.
- Stir the spinach into the beans for 1–2 minutes until wilted. Take the pan off the heat and stir in the butter and lemon juice. Taste before adding salt because the ham is salty; loosen with a splash of water if the beans are stiff.
- Spoon the soft beans into shallow bowls and lay a turkey steak over each, keeping the crisp ham above the sauce. Spoon over the turkey resting juices and serve straight away. The sage is cooked under the ham, so there is no raw herb garnish.
